We are going out of state for the holiday this year, and space and time preclude my making my family’s traditional Green Bean Casserole. While I won’t get to make or eat this particular one this year, I still want to share it with you! I love this particular recipe, and have instructions for both the regular recipe, and a slightly-lighter, lower calorie version.
The Momma Knows Green Bean Casserole
- 2 cans of cream of mushroom soup and 4 cans of French Style green beans
- 1 bag of frozen onion rings, partially thawed & cut in small pieces
- 1 lb. bacon, fried crisp and crumbled, and save 2 Tbls. of grease
Mix this all together, including the bacon grease, and bake.
The light version recipe: Substitute 2 tsp. Liquid Smoke for the bacon & bacon grease. I also use the fat free Cream of Mushroom soup, and 1/2 the bag of onion rings. You can use frozen petite green beans in place of canned. It’s a good idea to pre-steam them before assembling your casserole. Bake in a 9×12 rectangular baking dish (or 2? You might need 2) for 45 minutes at 350 degrees.
Doubled, this will easily serve 14 at a big holiday dinner. I know I’m going to miss it this year but I get to see my girl, so that more than makes up for it. Enjoy!
