Today at Classic Housewife, the theme is family recipes. We are going out of state for the holiday this year, and space and time preclude my making my family’s traditional Green Bean Casserole. While I won’t get to make or eat this particular one this year, I still want to share it with you! I love this particular recipe, and have instructions for both the regular recipe, and a slightly-lighter, lower calorie version.
5 Kids Green Bean Casserole
- 2 cans of cream of mushroom soup and 4 cans of French Style green beans
- 1 bag of frozen onion rings, partially thawed & cut in small pieces
- 1 lb. bacon, fried crisp and crumbled, and save 2 Tbls. of grease
Mix this all together, including the bacon grease, and bake.
The light version recipe: Substitute 2 tsp. Liquid Smoke for the bacon & bacon grease. I also use the fat free Cream of Mushroom soup, and 1/2 the bag of onion rings. You can use frozen petite green beans in place of canned. It’s a good idea to pre-steam them before assembling your casserole. Bake in a 9×12 rectangular baking dish (or 2? You might need 2) for 45 minutes at 350 degrees.
Doubled, this will easily serve 14 at a big holiday dinner. I know I’m going to miss it this year but I get to see my girl, so that more than makes up for it. Enjoy!

Oddly enough, green bean casserole (which I know is a popular item) was NEVER made at our house – ever. We did green beans, but they never made it into a casserole form. As a result, when I ate green bean casserole at my mother in law’s for the first time I was a little leery as I wasn’t quite sure what was in it (her family IS, after all, from the “back woods” of the “south.”)
(And by the way, South is in quotes because Tennessee and West Virginia may be “the south” but they are north to me! But I digress.)
At any rate – it wasn’t all that bad! I tried one once here at home but it wasn’t nearly as yummy sounding as this one – I much prefer the idea of using onion rings instead of the fried onions. YUM!
I made the french fried onions recipe one time and it was GROSS! I love this recipe (which is actually my aunt’s) because it is FULL of flavor. Even with my alterations to lower the fat content… I just LOVE it. You should try it!
