Today I decided that I need to roast those two chickens I bought over the weekend. I got preseasoned roasters, which are usually quite tasty. I mixed up a double batch of Sticky Chicken seasoning and rubbed it all over them too. I didn’t let them sit in the fridge overnight, because I really want to just cook them and be done with it. It’ll be fine though, because that recipe is wonderful! In case you’re interested, I use a recipe that a friend gave me, but I altered it a bit. Just for you, here it is:
Crockpot Roasted Sticky Chicken
- 1 Tb. garlic salt
- 2 tsp. paprika
- 1 tsp. red pepper
- 1 tsp. onion powder
- 1 tsp. thyme
- 1 tsp. black pepper
- 1 large roasting chicken
- 1 cup chopped onion
Clean & dry your chicken. Mix seasonings except onions and rub all over the chicken, and sprinkle in the body cavities. Place the chicken and onions in a gallon zipper storage bag and leave in refrigerator overnight.
When ready to cook, place chicken in the crockpot and do not add any liquid. As the cooking process goes on it will produce it’s own juices. Cook on low 8-10 hours until falling off the bone tender.
NOTE: I keep 2-3 recipe’s worth of the seasoning already made up in a seasoning shaker. When making this for the oven, I omit the onions and sometimes I skip the overnight refrigeration. It’s wonderful either way!
